St Patrick’s Day Dessert Idea: Pot of Gold Oreo Cookies with Rainbows
Whether you celebrate St. Patrick’s Day or not, it’s such a fun holiday to get creative and have some fun. My kids love it! Rainbows with a pot o’gold at the end, shamrocks, and leprechauns – all of it. If your kids are into St. Patrick’s Day like mine are, then these pot of gold Oreo cookies with rainbows are a fun way to celebrate. They can even help make this easy St Patrick’s Day dessert idea!
St Patrick’s Day Dessert Ingredients

- 1 package Double Stuf Oreo Cookies
- 2 bags Ghirardelli Chocolate Dark Melting Wafers
- 1 bag Wilton Metallic Gold Cake Sequins
- 1 package Airhead Extreme rainbow berry sour candy
- parchment paper
- cookie sheet
- water bottle

Directions for making Pot of Gold Oreo Cookies with Rainbows
Place the water bottle into the freezer for about 30 minutes.
Line the cookie sheet with parchment paper.
Melt the Dark Chocolate Wafers according to the instructions on the package. Mix until smooth.
Dip an Oreo into the chocolate. Use a fork to flip the Oreo over until it is completely covered. Then use the fork to carefully pick up the chocolate covered Oreo, lightly tapping the edge of the pot/bowl to shake off the excess chocolate.
Place onto the cookie sheet and finish dipping the rest of the Oreo cookies. Allow to completely dry, then place the Oreo on a cutting board and cut a thin slice off the top and bottom of each.
Melt more chocolate wafers. Dip the bottom of each cookie into the melted chocolate. Lightly shake off the excess. Place the Oreo onto parchment paper so that it is standing up. Repeat step with remaining Oreos.
Once the bottoms have hardened, slightly dip the top of the Oreos into the melted chocolate. Carefully place the gold sequins/sprinkles on top of the melted chocolate. Use tweezers to carefully dip the back of a few gold sequins into the chocolate (to act as a glue). Place these on top of and around the gold sequins that you placed on previously.
Randomly place more sequins throughout the already placed gold sequins. Place more onto the center on the top and build up to make it look like a full pot of gold
Take the water bottle out of the freezer and place onto the cookie sheet.
Cut each of the Airhead rainbow candy strips into thirds. Use the knife to spread a small amount of melted chocolate onto the bottom of the candy. Place the candy onto the top-back of the Oreo. Place the Oreo against the water bottle to help hold the candy piece in place. The water bottle will be cold enough to quickly harden the chocolate on the candy.
Repeat steps with remaining Oreos.
