Mini Layered Funfetti Easter Cake Instructions
Preheat oven to 350 degrees. Spray a large, thin pan with non-stick cooking spray.
Follow the instructions on the back of the box: in a large bowl, blend cake mixture, water, oil, and eggs. Mix until moistened and then use a mixer for 2 minutes on medium speed.
Pour a thin layer of cake mix into your pan . You may end up needing 2 pans for all of the mixture. Bake at 350 degrees for about 10-12 minutes or until you can insert a toothpick in the center and it comes out clean.
Set aside and let cool for 10-15 minutes.
Boil ½ cup water. Add the frosting mixture in a small bowl and slowly add the water while mixing on low speed for 30 seconds. Then, mix on high speed for 5-7 minutes.
Take a circular glass trifle dish (preferably from 2” across to 4” across) and place it upside-down on the cake. You could also try plastic tumbler glasses from the grocery store like these. Press down firmly and twist, cutting out the perfect size for your dish. Repeat these step 2 to 3 times depending on the height of the glass/dish.
Once you have your desired cake layers, it time to put it all together! First, add a cake layer to the bottom. Next, add a layer of fluffy frosting. Then, add a thin layer of cotton candy. Finally, add M&Ms.
Repeat this process until you have reached near the top. Finish by topping the mini layered cake with a final layer of frosting – twist the spatula in the center to create a swirl for added fun!
Add matching sprinkles and a bunny topper for the perfect Easter dessert! Or leave the bunny off for creative individual birthday cakes that are sure to wow the guests.
