Dreamy Orange Creamsicle Cupcake Recipe
Growing up, one of my favorite flavors was (and still is!) orange dream/orange creamsicle. Have you ever tried orange creamsicle cupcakes? Yum! Orange Creamsicle Cupcake Recipe
Cake Ingredients
- 2 eggs
- 1/2 cup unsalted butter
- 1 1/2 cup flour
- 1 cup granulated sugar
- 1 3/4 tsp baking powder
- 1/2 cup whole milk
- 1 cup orange juice
- drop of vanilla
Frosting Ingredients
- 2 + cups powdered sugar
- 1/2 cup sweet cream
- 2 tbsp heavy cream
- 2-5 drops of orange food coloring
- 2 drops of orange flavoring such as orange pixie sticks
Cake Batter Instructions
Preheat oven at 350 degrees. In the meantime, line the cupcake/muffin tin with paper liners.
Beat the butter and sugar together until it becomes creamy. Sift together the flour and baking powder. Add one egg at a time to the creamy butter and sugar mix. Beat the mixture before adding the second egg and then beat it again after adding it.
Next, add the vanilla.
Combine the flour mixture to the creamy mixture and stir it together. Add the milk and gently stir. Slowly add the orange juice. Ensure that the batter is well mixed.
Pour batter into muffin tins and place in the oven. Bake at 350 degrees for 15-18 minutes. Allow to cool for 20 minutes.
How to make the Orange Creamsicle Frosting
Beat the sweet cream with the electric mixer on low to soften it. Add 2 cups of powdered sugar. Continue to beat at medium speed until it forms small pebbles.
Add heavy cream and orange flavoring. Beat with mixer to incorporate the heavy cream and orange flavoring.
Check to see if the frosting can stand in stiff peaks. If not continue to add powdered sugar and mix well until the frosting can stand in the stiff peaks.
Separate the frosting in half. Keep one half as white. Add orange food coloring to the other half and stir until the color is a vivid orange.
Get out your pastry bag (or a ziplock bag with the corner cut). Add the white frosting on one side of the bag and the orange frosting on the other side. Test to make sure both frostings come out of the tip at the same time. Now it time to frost the cupcakes!
